Raw Vegan Wineberry Pie

Ingredients: dried apricots, almonds, agave nectar, wineberries, apples, arrowroot powder (thickening agent) (all organic ingredients preferably!)

Crust: 1.5 cups dried apricots and 1.5 cups almonds. Blend both simultaneously in food processor. Once they are diced, add two swirls of agave nectar and then blend more until the mixture becomes a bit clumpy and adhesive. When complete, press into a pie plate using wax paper.

Filling: blend 4 cups wineberries and 2 apples in food processor. Once liquified, add 2-3 swirls of agave nectar and 2-3 tablespoons arrowroot power. Blend together more, then add more arrowroot depending on consistency (too watery - more arrowroot is needed, but it doesn't have to be as thick as pudding either). Once you are satisfied with consistency, pour into crust and then the pie is finished! Let it sit in the the refrigerator for 1-2 hours to set and gel, then garnish with additional wineberries and consume!

The pie can also be made with 2 cups of strawberries instead of wineberries and 1 apple instead of 2. This version of the recipe hails from Spirit Bliss organic farm/non-profit education center in Mount Airy; the wineberry pie is my adaptation of their strawberry pie recipe.
